Cocoa butter comes from cocoa beans, a tropical tree native to South America and now mainly cultivated in West Africa, Central America, and Asia. The beans are found inside cocoa pods, large colorful fruits that grow directly on the trunk of the cocoa tree.

After harvesting, the beans are extracted, fermented, and dried—essential steps that develop their aromas and prepare the raw material for cocoa butter production.

How is cocoa butter made?

The transformation of cocoa butter is a technical and fascinating process. Here are the main steps:

1. Roasting the beans

The beans are heated between 100 and 150°C to develop their aromas and remove moisture. This step directly influences the quality of the resulting butter.

2. Grinding into cocoa liquor

The roasted beans are ground until they form a fluid paste called cocoa liquor. It is this paste that naturally contains the fat that will become cocoa butter.

3. Hydraulic pressing

The liquor is then subjected to very high pressure—between 400 and 500 bars—to separate the liquid cocoa butter from the solids (the press cake).

4. Cooling and solidification

Once extracted, the cocoa butter is cooled to become an ivory or pale yellow solid. It is then molded into blocks or pastilles for use in cosmetics or food.
